Pearl Ice Tea

This delicious tea (also known as boba or bubble tea) can easily be made at home and is great alone or with a Thai meal.

Ingredients:

  • 24 cup water
  • 2 cup Thai Iced Tea Mix
  • 1 ½ cup Tapioca pearls
  • 1 cup fresh milk
  • ½ cup mint leaves
  • 1 ½ cup sugar

Procedures: The Syrup

  1. Mix sugar, 4 cup water and mint leaves; boil
  2. Cool when sugar is dissolved.
  3. Set aside.

Procedures: Brewing the Tea

  1. Measure 8 cup water and boil
  2. Pour over tea and and steep
  3. In a pitcher, strain the tea to removed the leaves(One recipe suggested a coffee filter)
  4. Cool and set aside.

Procedures: Cooking the Pearls

  1. Bring 12 cup water to a boil and carefully add the pearls
  2. When tapioca is soft, pour off water
  3. Store with 2 cup syrup

Assembly:

  1. Fill a 20-oz glass 1/3 full of cooked pearls
  2. Pour over them 2 tbsp of the syrup (remaining from pearl storage)
  3. Add milk and tea , ½ cup each, and cover glass and shake.
  4. Taste for sweetness, and serve with wide straws.
  5. Optional: Top with whipped topping.

Serves 2 or 3, with remaining tea reserved.
