This party dish has been described as very spicy.
Ingredients:
- 1 whole, skinless, chicken breast (about 10 oz)
- 1 ½ Tbsp fish sauce
- 3 Tbsp sugar
- 3 Tbsp lime juice
- ½ Tsp cayenne pepper
- 3 Cup chopped collards or spinach
- ½ Cup chopped roasted peanuts
- ½ Cup peeled and shredded carrots
Procedure:
- Rinse chicken breast, cover with water, and bring to a boil
- Then cover and simmer for 30 minutes or until tender.
- Remove. Cool for 15 minutes.
- When cooled to touch, shred into small pieces. Place in a bowl.
- In a second bowl, mix sugar, lime juice, cayenne, and fish sauce until sugar is dissolved.
Pour juice over chicken and mix well.
- Place chopped greens on a serving plate.
- Spoon shredded chicken over greens and top with peanuts and carrots.
