Chicken Collard (or Spinach) Salad

This party dish has been described as very spicy.

Ingredients:

  • 1 whole, skinless, chicken breast (about 10 oz)
  • 1 ½ Tbsp fish sauce
  • 3 Tbsp sugar
  • 3 Tbsp lime juice
  • ½ Tsp cayenne pepper
  • 3 Cup chopped collards or spinach
  • ½ Cup chopped roasted peanuts
  • ½ Cup peeled and shredded carrots

Procedure:

  1. Rinse chicken breast, cover with water, and bring to a boil
  2. Then cover and simmer for 30 minutes or until tender.
  3. Remove. Cool for 15 minutes.
  4. When cooled to touch, shred into small pieces. Place in a bowl.
  5. In a second bowl, mix sugar, lime juice, cayenne, and fish sauce until sugar is dissolved.
    Pour juice over chicken and mix well.
  6. Place chopped greens on a serving plate.
  7. Spoon shredded chicken over greens and top with peanuts and carrots.
