The Thai name means "good fortune" and the dish is popular at all kinds of celebrations.
Ingredients:
- 3 shallots
- 1 lime
- 3 green onions
- 5 sprigs fresh mint
- 6 Boston lettuce leaves
- 1 small cucumber
- 2 tbsp fish sauce
- 2 tbsp brown sugar
- 2 tsp chili powder
- 1 lb ground chicken breast
- 2 tbsp unsalted peanuts
- 1 medium tomato
Preparation:
- Peel and chop the shallots, measure 2 tbsp and set aside.
- Cut the lime and squeeze juice: measure 2 tbsp and set aside.
- Wash and chop green onions; measure ΒΌ cup and set aside.
- Rinse the mint, pat dry with towel, discard stems and tear leaves in small pieces.
- Wash the lettuce leaves, pat dry and set aside.
- Cut tomato in small chunks and set aside.
- Chop the peanuts and set aside.
- Put chicken, fish sauce, lime juice, sugar, and chili powder in 1 quart pan over medium heat.
- Cook until chicken is no longer pink, stirring to break up pieces.
- Remove chicken with slotted spoon into a large bowl.
- Add the shallots, scallions, peanuts and mint leaves and toss.
- Tear lettuce leaves into bite-sized pieces, arrange with cucumber and tomatoes on platter.
- Add chicken mixture to the center of the platter and serve.
