Seasoning Sauce

The Thai people use this sauce in place of salt. It is omnipresent! Keep it in a covered refrigerator bowl for up to two weeks.

Ingredients:

  • 4 Tbsp fish sauce
  • 2 Tbsp sugar
  • 2 Tbsp water
  • 2 Cloves garlic
  • 2 Tbsp fresh lime juice
  • 1 Tsp red curry paste

Preparation:

  1. Combine all ingredients in a small bowl
  2. Stir to dissolve sugar, curry paste
  3. Taste results, and add water slowly if too salty or too strong
  4. Serve at room temperature in small bowls
