Thai Satay

A native dish in Malaysa, Satay is spiced up by the Thai people with more curry.

Ingredients:

  • 2 tsp sugar
  • 1 tbsp Thai fish sauce
  • 1 ½ tsp Thai yellow curry
  • 1 ½ lb pork loin
  • 1 ½ cup coconut milk
  • 4 tbsp chunky peanut butter
  • 10 bamboo skewers

Preparation:

  1. Slice pork into thin 2 inch strips
  2. Add pork, sugar, fish sauce, to pork in a mixing bowl
  3. Cover and refrigerate for 4 to 12 hours.
  4. Boil coconut milk and peanut butter
  5. Refrigerate milk and peanut butter, covered.
  6. Soak skewers in water for half an hour
  7. Thread marinated pork on skewers
  8. Broil in oven or on grill, turning often
  9. Serve hot with bowls of the coconut sauce for dipping.
