Coconut Rice

A soothing side dish with spicy curries. Served with almost every Thai meal.

Ingredients:

  • 1 ½ Cup Jasmine rice
  • Cold water for rinsing
  • 2 Cup coconut milk
  • 1 ¼ Cup water
  • 1 Tbsp granulated sugar
  • Pinch of salt

Procedure:

  1. Mix rice and cold water in a bowl, swishing with clean hands to remove starch
  2. Pour off the water
  3. Repeat three times
  4. Drain rice in a strainer and shake off excess water
  5. Pour the milk, water, sugar, and salt into 4-quart pan
  6. Add the rice and boil
  7. Cover and simmer for 20 minutes
  8. Remove from heat, still covered, for 5 minutes before serving
