Lemon Crab Soup

Like all fine Thai dishes, this one combines sharp flavors, highlighted by a satisfying lemony tang.

Ingredients:

  • 3 Cup chicken broth
  • 1 T grated lemon peel
  • 1 can fresh crab meat
  • 1 Cup bite-sized pieces of fresh cauliflower
  • 1 tomato
  • ½ Cup sliced fresh mushrooms
  • 1 tsp sugar
  • 2 tbsp fish sauce
  • 1 ½ lemon juice

Preparation:

  1. Flake the crab meat gently.
  2. Cut tomato into 8 wedges.
  3. In a large pan, bring broth to a boil over high heat.
  4. Add lemon peel and cook uncovered over medium heat until broth tastes lemony.
  5. Add crab, cauliflower, tomato and mushrooms.
  6. Cook, uncovered, for 3 to 4 minutes until flavors are blended.
  7. Add sugar, fish sauce, and lemon juice. Stir thoroughly.
  8. Serve hot over rice or in bowls.

Serves 4 generously
