Made from the mighty mung bean, clear noodles are an essential element to many Thai dishes. Clear Thai noodles are also called cellophane noodles, transparent noodles, bean thread noodles,or glass noodles.

Coming in a whole host of shapes and sized, the most common form of the clear noodle in Thai cooking is the vermicelli size. Look for them in your local Asian market in a dried form, usually grouped into a large bundle, and having a bright white color. After you have cooked the noodles, the will become completely opaque, clear and soft.
