Papaya Salad

Choose unripened papaya to grate and combine with seasonings. In Thailand, this dish is created with a mortar and pestle. With a food processor this dish is both quick and delicious.

Ingredients:

  • 1 medium unripened papaya
  • 2 cloves garlic
  • 1 to 2 jalapeno chiles
  • 8 cherry tomatoes
  • ½ cup fresh green beans
  • 2 limes making 2 tbsp of lime juice
  • 2 tbsp unsalted, roasted peanuts
  • ½ tsp salt
  • 1 tbsp sugar
  • 2 tbsp fish sauce
  • Lettuce leaves, cucumber slices, carrot sticks, and shredded cabbage for serving.

Procedure:

  1. Peel and halve papaya: pat dry
  2. Place in food processor
  3. Add garlic
  4. Add chilis (with gloved hands)
  5. Add salt and sugar
  6. Process until combined in chunks
  7. Add green beans and peanuts, also chopped
  8. Add fish sauce and lime juice and toss
  9. Serve at once over lettuce leaves, cucumber slices, shredded cabbage, and carrot sticks
