Another side dish, add ½ Cup cooked chicken to make it a meal.
Ingredients:
- 1 Package oriental mixed vegetables, thawed
- 2/3 Cup coconut milk
- 1/3 Cup low-fat peanut butter
- ¼ Cup light soy sauce
- 2 Limes
- ½ Tsp yellow curry paste
- ¼ Tsp red pepper flakes
- 1 Green onion cut in rounds
Procedure:
- Microwave the vegetables until done, set aside
- In a small saucepan, combine the coconut milk, peanut butter, and curry paste, cook until smooth
- Add soy sauce, lime juice, and red pepper flakes, toss
- Remove from heat and toss with vegetables
- Serve over rice, topped with green onion rounds
