Thai Easy Mixed Vegetables

Another side dish, add ½ Cup cooked chicken to make it a meal.

Ingredients:

  • 1 Package oriental mixed vegetables, thawed
  • 2/3 Cup coconut milk
  • 1/3 Cup low-fat peanut butter
  • ¼ Cup light soy sauce
  • 2 Limes
  • ½ Tsp yellow curry paste
  • ¼ Tsp red pepper flakes
  • 1 Green onion cut in rounds

Procedure:

  1. Microwave the vegetables until done, set aside
  2. In a small saucepan, combine the coconut milk, peanut butter, and curry paste, cook until smooth
  3. Add soy sauce, lime juice, and red pepper flakes, toss
  4. Remove from heat and toss with vegetables
  5. Serve over rice, topped with green onion rounds
