Fresh and tasty as a vegetable side dish.
Ingredients:
- ½ Lb green beans, washed and trimmed
- 5 Sprigs cilantro, chopped
- ¼ Cup dry roasted peanuts, chopped
- 1 Tbsp light soy sauce
- 1 Tbsp oyster sauce
- 1 Tbsp creamy peanut butter
- 1 Tbsp shallot, minced
- ½ Tsp crushed red pepper flakes
- 1 Tsp vegetable oil
- 1 Tsp chopped fresh ginger root
Procedure:
- Microwave the green beans until crisp-tender; set aside
- Heat the oil and add the shallot and ginger root; cook for two minutes
- Mix in the soy sauce, oyster sauce, peanut butter, and crushed red pepper
- Cook until sauce is smooth (it may be necessary to add a Tbsp or two of water.)
- When accomplished, add the green beans and heat
- Cook for a few minutes and serve hot
- Garnish with peanut butter and chopped cilantro
