Thai Green Beans

Fresh and tasty as a vegetable side dish.

Ingredients:

  • ½ Lb green beans, washed and trimmed
  • 5 Sprigs cilantro, chopped
  • ¼ Cup dry roasted peanuts, chopped
  • 1 Tbsp light soy sauce
  • 1 Tbsp oyster sauce
  • 1 Tbsp creamy peanut butter
  • 1 Tbsp shallot, minced
  • ½ Tsp crushed red pepper flakes
  • 1 Tsp vegetable oil
  • 1 Tsp chopped fresh ginger root

Procedure:

  1. Microwave the green beans until crisp-tender; set aside
  2. Heat the oil and add the shallot and ginger root; cook for two minutes
  3. Mix in the soy sauce, oyster sauce, peanut butter, and crushed red pepper
  4. Cook until sauce is smooth (it may be necessary to add a Tbsp or two of water.)
  5. When accomplished, add the green beans and heat
  6. Cook for a few minutes and serve hot
  7. Garnish with peanut butter and chopped cilantro
