Thai Pork Pineapple Snacks

A great appetizer, easy to assemble with two or three helping.


  • 1/3 cup dry roasted peanuts, chopped fine
  • 2 tbsp vegetable oil
  • 1 tsp minced onion
  • 2 cloves minced garlic
  • ½ lb ground pork
  • 1 tbsp sugar
  • 1 tsp salt
  • ¼ tsp ground black peppercorns
  • 2 tsp cornstarch softened with 2 tsp cold water
  • 1 can pineapple rings
  • Cilantro leaves for garnish


  1. Stir-fry onions and garlic in vegetable oil till soft
  2. Add pork and cook until no longer pink
  3. Stir in the peanuts, sugar, salt, and pepper
  4. Stir in cornstarch mix, simmer till pork holds it shape
  5. Cut pineapple into 72 bite-sized pieces on two platters
  6. Top each with 1 tsp of pork filling, and garnish each one with cilantro leaf
