Thai Special Rice

Done right, this popular rice should be a bit dry to soak up soup or curry.


  • 2 Cup extra-long grain rice
  • 2 ½ Cup water
  • Preparation:

    1. Boil rice and water, uncovered, for 2-3 minutes over high heat in a deep saucepan
    2. Cover pan, reduce heat to low, and simmer for 20-25 minutes (till all water is absorbed)
    3. Remove from heat, still covered, for 10 minutes
      Fluff with fork and serve hot

    Makes 6 Cups
