A great appetizer, easy to assemble with two or three helping.
Ingredients:
- 1/3 cup dry roasted peanuts, chopped fine
- 2 tbsp vegetable oil
- 1 tsp minced onion
- 2 cloves minced garlic
- ½ lb ground pork
- 1 tbsp sugar
- 1 tsp salt
- ¼ tsp ground black peppercorns
- 2 tsp cornstarch softened with 2 tsp cold water
- 1 can pineapple rings
- Cilantro leaves for garnish
Procedure:
- Stir-fry onions and garlic in vegetable oil till soft
- Add pork and cook until no longer pink
- Stir in the peanuts, sugar, salt, and pepper
- Stir in cornstarch mix, simmer till pork holds it shape
- Cut pineapple into 72 bite-sized pieces on two platters
- Top each with 1 tsp of pork filling, and garnish each one with cilantro leaf
