This distinctive (and economical) dish is a sure to become a favorite.
Ingredients:
- 3 wood ears (available in oriental markets, dried)
- 1 ½ tsp cornstarch
- ¼ cup broth
- 3 tbsp vegetable oil
- 1 lb beef tips, sliced
- ½ medium onion, thinly sliced
- 1 clove garlic, minced
- 2 cups broccoli, chopped
- 1 tsp soy sauce
- 1 tsp fish sauce
- 1/8 tsp pepper
- hot rice noodles
Preparation
- Soak wood ears in hot water, drain.
- In small bowl, soften cornstarch in broth.
- In wok or skillet, heat 2 T of oil for 1 minute.
- Add meat and cook, stirring vigorously until meat is brown (2 to 3 minutes) reserve.
- Wash wok and dry thoroughly. Heat another T of oil over high heat for 1 minute,
- Cook garlic and onion in oil, stirring constantly, until tender.
- Add broccoli and stir well.
- Stir in cornstarch mixture.
- Cover, reduce heat to low, and simmer until broccoli is crisp-tender (about 2 minutes)
- Add wood ears, soy sauce, fish sauce, pepper, and meat.
- Stir constantly, for 2 minutes.
- Serve over noodles.
