Panang curry dishes are dryer than red, green, or yellow.
Ingredients:
- 2 cup beef steak, cut into thin strips
- 1 cup large diced red Bell pepper
- 2 cup coconut milk
- 2 tbsp Panang curry paste
- 1 ½ tbsp fish sauce
- 2 tbsp sweetener
- 2 tbsp roasted peanuts
- 3 fresh Thai chili peppers
Procedure:
- Crush the peanuts in a mortar and pestle
- Set aside 3 tbsp of the coconut milk
- Heat the remaining milk until oil comes to the surface.
- Add curry paste and fry until the mix is aromatic.
- Add meat and cook until rare.
- Add bell peppers, fish sauce, and sugar. Simmer.
- Remove from heat, top with 3 tbsp coconut milk, peanuts, and chili peppers.
- Mix the above and serve with freshly steamed Jasmine rice.
