Yellow Beef Curry
Try this delicious Thai beef curry recipe made with coconut milk, turmeric, red curry paste, and other spices.

To create this dish authentically, the cook must have patience. The results are worth it.

Ingredients:

  • 3 cups coconut milk
  • 2 Tbsp red curry paste
  • 2 tsp tumeric
  • 2 star anise
  • 1 2-inch piece of stick cinnamon
  • 2 medium-size bay leaves
  • 1 ½ lean beef chuck, fat trimmed
  • 3 medium yellow potatoes, peeled
  • 3 medium sized sweet onions

Procedure:

  1. Cut beef into 1-inch cubes
  2. Slice onions into 1-inch slices
  3. Cut potatoes into 1-inch cubes
  4. Boil 1 cup of the milk until reduced to about ½ cup
  5. Add curry paste and tumeric, stir briskly
  6. Add star anise, cinnamon and bay leaves
  7. Add beef and coat evenly
  8. Add onions, potatoes, and 2 cup milk
  9. Stir and boil gently, covered, for 40 minutes
  10. Serve from a large, heated bowl
