To create this dish authentically, the cook must have patience. The results are worth it.
Ingredients:
- 3 cups coconut milk
- 2 Tbsp red curry paste
- 2 tsp tumeric
- 2 star anise
- 1 2-inch piece of stick cinnamon
- 2 medium-size bay leaves
- 1 ½ lean beef chuck, fat trimmed
- 3 medium yellow potatoes, peeled
- 3 medium sized sweet onions
Procedure:
- Cut beef into 1-inch cubes
- Slice onions into 1-inch slices
- Cut potatoes into 1-inch cubes
- Boil 1 cup of the milk until reduced to about ½ cup
- Add curry paste and tumeric, stir briskly
- Add star anise, cinnamon and bay leaves
- Add beef and coat evenly
- Add onions, potatoes, and 2 cup milk
- Stir and boil gently, covered, for 40 minutes
- Serve from a large, heated bowl
