Cucumber Relish

The diner finds this dish in every Thai restaurant, and every Thai chef has his spin on it. Here is one:

 

Ingredients:

  • 1 Medium cucumber
  • 3 Shallots
  • 1 Inch-thick slice fresh ginger
  • 4 Sprigs of cilantro
  • 1 Red jalapeno chili
  • 4 Tsbp rice vinegar
  • 4 Tsbp water
  • 3 Tsbp white sugar
  • ¼ tsp salt

Procedure:

  1. Cut washed cucumber in half lengthwise, then quarters, then ½ inch slices
  2. Peel shallots, slice thinly, set aside
  3. Peel ginger, discard skin, mince
  4. Rinse cilantro and pat dry; chop leaves roughly
  5. With kitchen gloves on, remove the chili stem and discard the seeds
  6. Cut chili into small slices
  7. In a small saucepan, combine water, sugar, salt, and vinegar
  8. Boil and stir to dissolve the sugar. Cook syrup for 2 minutes, cool.
  9. In a small bowl, mix the cucumber, the shallots, ginger, cilantro, and chili.
  10. Add the cooled syrup to the bowl and toss well.
  11. Serve a tablespoon size amount on every plate.
