Tropical Fruit Dessert

Good enough to serve anytime with a variety of dishes.

Ingredients:

  • 1 20-oz can lychees in syrup
  • ½ cup coconut milk
  • 2 tbsp sugar
  • 1 can pineapple chunks in syrup
  • Cracked ice

Procedure:

  1. Drain fruit, reserving syrup.
  2. Cut lychees in half.
  3. In small bowl, stir together 1 cup of syrup, coconut milk, and sugar.
  4. Stir until sugar is dissolved and chill.
  5. Cut pineapple chunks in half
  6. To serve, divide fruit among 6 medium dessert dishes and pour chilled sauce over it.
  7. Sprinkle a bit of cracked ice over the top of the bowl.
