Good enough to serve anytime with a variety of dishes.
Ingredients:
- 1 20-oz can lychees in syrup
- ½ cup coconut milk
- 2 tbsp sugar
- 1 can pineapple chunks in syrup
- Cracked ice
Procedure:
- Drain fruit, reserving syrup.
- Cut lychees in half.
- In small bowl, stir together 1 cup of syrup, coconut milk, and sugar.
- Stir until sugar is dissolved and chill.
- Cut pineapple chunks in half
- To serve, divide fruit among 6 medium dessert dishes and pour chilled sauce over it.
- Sprinkle a bit of cracked ice over the top of the bowl.
