Baked Fish Curry

A great tasting a make-ahead company dish. Takes 30 minutes in the oven.

Ingredients:

  • 1 Lb fresh fish, cut in ¾ inch cubes
  • 10-oz Cabbage, sliced
  • 1 Tbsp red curry paste
  • 1 Tbsp oil
  • 3 Tbsp fish sauce
  • 1 Red pepper, seeded and chopped
  • 2 eggs


Procedure:

  1. Heat the oil with the curry paste until fragrant. Cool.
  2. In a large bowl, add the paste to the fish and fish sauce.
  3. Mix milk and beaten egg and add to fish mixture
  4. Place the cabbage on bottom of a 9x9" greased baking dish.
  5. Arrange the fish on the cabbage and garnish with the red pepper strips.
  6. Bake at 350 degrees for 30 minutes.
