Thai Green Shrimp Curry

Like the yellow beef curry, this is a staple on almost every Thai restaurant menu.

Ingredients:

  • 1 ½ lbs fresh shrimp
  • 2 cup coconut milk
  • 3 tbsp green curry paste
  • 2 tbsp fish sauce
  • 4 fresh basil leaves
  • 2 tbsp roasted and ground coriander seeds.

Procedure:

  1. Peel and devein shrimp, wash, pat dry
  2. Reduce 1 cup of the milk to ½ cup in a 4-quart saucepan
  3. Stir in curry paste, coriander seeds and fish sauce
  4. Cook until most of the moisture is gone.
  5. Add shrimp and stir until pink.
  6. Add remaining milk, simmer uncovered for 10 minutes
  7. Serve from large heated bowl and garnish with basil leaves.
