A fine way to cook asparagus spears, cooks in minutes once the ingredients are assembled.
Ingredients:
- 1 Bunch fresh asparagus
- 1 Carrot, julienned
- 1 Red bell pepper, seeded and sliced thinly
- 2 Cup Bean sprouts
- ¾ Cup mushrooms, sliced
- 1 Green onion, cut into 1-inch slices
- 2 Tbsp healthy oil for stir frying
Stir-fry Sauce:
- 1 Tbsp brown sugar
- 3 Tbsp oyster sauce
- 1 Tbsp fish sauce
- 1 Tsp shrimp paste
- 1 Small chili, seeded and chopped with kitchen gloves
- 1 Tsp sesame oil (reserved for separate use)
Procedure:
- Snap the asparagus spears so only the tender 2 ½ tips remain
- Heat the oil in the wok and assemble by the burner the vegetables and sauce
- Add the asparagus and stir-fry for one minute
- Add carrot strips and mushrooms
- Stir fry till done, adding a bit of water rather than oil if the mix becomes dry
- Add green onions and Bell pepper, cook 1 minute
- Add the bean sprouts and sauce minus the sesame oil.
- When sprouts are heated through, drizzle the oil over the dish.
- Serve immediately over rice.
Serves 3-4, to extend the recipe add more asparagus.
